The Fruits of Summer….

The Fruits of Summer...strawberries, blueberries and raspberries, oh my!

Who doesn’t remember as a kid, eating watermelon, with the juice running down your chin and fresh berries with sweet cream, oh so good…  I recently heard someone call fresh berries Nature’s “Skittles,” obviously preferred to the candy because they are so packed with vitamins and nutrients.

Sweet juicy watermelon is high in some of the most important antioxidants in nature and is an excellent source of vitamin C and vitamin A. Watermelon has an extremely high water content, approximately 92 percent, making it a favorite thirst-quenching fruit.

For a quick and delicious summer treat, blend frozen watermelon chunks with a splash of fresh lemon juice and you have a yummy watermelon cooler. The kids will love this!!!

Blueberries are not only a popular fruit, they are high in fiber and are phytonutrient superstars, repeatedly ranked in the U.S. diet as having one of the highest antioxidant capacities among all fruits. Just 1/2 cup doubles the amount of antioxidants most Americans get in a day.

Raspberries are not only delicious eaten alone or with many other foods, they are an excellent source of fiber, manganese, vitamin C and potassium. In addition, they contain significant amounts of the anti-cancer phytochemical ellagic acid.

Below is a recipe that includes watermelon, blueberries and raspberries, a delicious way to enjoy the fruits of summer while they’re fresh and available to us!

Watermelon & Blueberries with Fresh Raspberry Sauce and Sweet


  • 1/3 cup raspberry vinegar 
  • 2 Tbs. sugar 
  • 1 cup raspberries
  • ½ cup blueberries
  • 4 watermelon wedges with their rind, chilled 
  • mint sprigs, for garnish, and a dollop of sweet cream

Directions: In a small saucepan, combine the vinegar and sugar and bring to a boil over medium heat, stirring until the sugar dissolves. Remove from the heat and stir in the raspberries.

Place the watermelon wedges on plates cover with blueberries and spoon the raspberry mixture over. Garnish with mint sprigs, a dollop of sweet cream and serve.  Enjoy.
